In Ayurveda Butterfly Pea Tea symbolises a good mood and a clear mind
The Butterfly Pea flower has been treasured in Ayurvedic tradition for centuries. In Sanskrit it is called Aparajita, after a form of the goddess Durga that symbolises the unconquerable. It has been used in South Asian kitchens as a natural blue dye, a ceremonial ingredient, and a gentle tea long before the West discovered it.
Butterfly Pea is naturally caffeine-free, little blue flowers that give water a vivid indigo color the moment it touches. Add a squeeze of lime and watch the whole cup turn violet.
The blue you see when you brew it is not a dye. It is the flower giving up its natural colour to your cup. The violet or pink you see when you add lime is a real chemical reaction between the anthocyanins and the citric acid.
In the evening, as a caffeine-free alternative to chamomile.

How to brew
Heat water to 80°C
Add 1 tsp of Butterfly Pea per cup
Steep for 5–8 minutes
Customise with honey, lime juice or ginger to taste
A squeeze of lime or any citrus will magically change the tea's blue colour. Try it.

Recipes
For an iced tea:
Brew it stronger. Use 3g of flowers per cup.
Let it cool completely, then chill in the fridge for at least an hour. Pour over one large ice cube. Add lime and a sprig of fresh mint. Serve.
Honey pairs beautifully. A slice of fresh ginger deepens the flavour. A splash of coconut water turns it into something almost tropical.
